All the experts are predicting a worldwide pandemic in the near future.

Facing the threat of a bird flu pandemic the World Health Organization (WHO) has some advice for the public. Some of this advice is directed toward world travelers, while other advice concerns food safety.

While the WHO doesn’t recommend that travelers avoid areas that have reported outbreaks of avian bird flu. Pandemic watchers may wonder why WHO also doesn’t recommend that travelers returning from such areas be routinely screened. Instead they rely on local authorities in affected areas to alert travelers about risks, how to avoid them and where to report if they begin to experience any symptoms.

WHO does advise travelers to avoid any direct, unprotected contact with infected birds. Additionally, they are advised to avoid any public markets where they may come into contact with poultry. Since the virus is known to be found in the droppings, travelers should also avoid any dead or sick migratory or wild birds.

To avoid risk of spreading the avian bird flu pandemic travelers, or anybody for that matter should be aware of the danger of coming in contact with sick poultry. In addition, any areas that could be contaminated by droppings have been found to be one of the main avenues of infection in humans.

raw-chickenThe danger of disease transmission has proven to be greatest during the food preparation process. This is especially true during the actual slaughter and defeathering of the poultry.

The WHO does emphasize that the H5N1 influenza cannot be transmitted by properly cooked food. As long as the food is cooked to a temperature of at least 70°C then the virus is “killed”. Even if the poultry meat contains the virus, cooking totally eliminates any threat of avian bird flu pandemic.

eggsFollowing good food-handling practices will go a long way toward avoiding any possibility of transmission of bird flu due to infected poultry. Don’t let the juices of the raw meat come into contact with any food that will be eaten without being cooked first, such as salad items and fruit. In addition to making sure that the meat is cooked to the correct temperature, make sure that all “pink” has been cooked out, and that even egg yolks are cooked thoroughly and not “over easy”.

In fact, in areas where there have been reported outbreaks of bird flu, the live virus can be found on the shell and in the white and yolk of the eggs. It is therefore imperative that consumption of anything contain raw eggs (mayonnaise, etc) should be totally avoided.

An avian bird flu pandemic is currently expected at some point in the near future. Since viruses have been known to mutate in their method of transmission, any cautions regarding exposure to birds and poultry may become somewhat irrelevant should (or “when”) the transmission change to human-to-human.

Under threat of a world-wide avian bird flu pandemic, everyone should know how to prevent contracting the disease.
